Yamarita Egg Coated Yam fries

Yamarita (Egg Coated Yam fries) is boiled yam coated in egg, flour, ginger, garlic and salt. It is a Nigerian cuisine originally from the North (Hausa recipe – Dun Dun Oniyeri).

Ingredients (serving for 2)

  • Yam – 1kg
  • 2 spoons of all purpose flour
  • 3 eggs
  • 1 teaspoon of ground pepper/cayenne
  • 1 teaspoon of black pepper
  • A pinch of salt
  • 1 teaspoon of garlic
  • 1 teaspoon of ginger
  • 1 teaspoon of curry powder
  • 1 teaspoon of thyme
  • 1 cube of seasoning (maggi, knorr, onga etc)
  • Water


  • Peel the yam and cut into desired shapes – rectangles, squares etc, about half to one inch thick

  • Put the yam in a pot, add water to just cover the yam. Season with salt and letb it cook for about 7 minutes.

  • Drain the excess water and transfer the yam to a bowl of cold water (room temperature) to stop the cooking process. Drain again and set aside.

  • Crack the eggs into a bowl, add the cayenne pepper (optpional) and salt to taste. Whisk together and set aside.

  • In a separate bowl, add the flowere, garlic powder, curry powder, thyme, black pepper and seasoning and mix together thoroughly.

  • Dip the yam slices, one at a time, in the egg and then in the flour mixture respectively, making sure the yam is fully coated.

  • Preheat about 300ml of oil over medium heat for about 1 – 2 minutes.. When the oil is hot, place the coated yams inside the oil. Fry and flip the yam until it becomes golden brown.

  • Serve with your favourite side dishes – omelet, pepper sauce, Obe ata Dindin or any stews & sauces you have around.
